The Best Cobb Salad Ever! (Easy Summer Dinner)

So I have talked before about how amazing this cookbook is. All of her recipes are FOOLPROOF (that I have tried anyways) and definitely crowdpleasers. Not to mention, she has a second cookbook coming out soon (preorder here!) and is hilarious on social media.

This week for dinner, we tried the Cobb Salad with Honey Mustard Ranch. I made some tweaks to it, based on what we already had and it was a hit. My picky kid even loved it!
Cobb Salad with Honey Mustard Ranch (Adapted)
2 Chicken Breasts
1/4 tsp Dried Thyme
1/4 tsp Cayenne
2 tsp Paprika
1 tsp Garlic Salt
1/4 tsp Black Pepper
1 tsp Cumin
1 Head Iceberg Lettuce
1 Cup Cherry Tomatoes, cut in half
1 Avocado, sliced
2-3 Hardboiled Eggs, sliced (The best way is in the InstantPot!)
6 Slices Turkey Bacon, chopped
1 Can Corn
1/2 Cup Mayonnaise
1/4 Cup Milk
1/2 tsp Oregano
1 tsp Garlic Salt
2 tbsp Honey
2 tbsp Dijon Mustard
1/4 tsp Pepper
1/2 tsp Paprika
For the chicken, I mixed all of the spices and oil together and rubbed it all over one side of the chicken breast. I (Dan) threw it on the grill until it was cooked through (about 15 minutes), and then we sliced it up.
As the chicken was cooking, I mixed everything for the salad dressing together and threw it in the fridge. Just dump everything into a bowl, whisk it up, and it is good to go. (This dressing is amazing.)
To assemble the salad, I got a large plate and put the chopped iceberg lettuce down, followed by the cherry tomatoes and avocado. I drained and patted the corn dry and sprinkled it on top as well. Then I tried to get fancy with how I laid the chicken, eggs and bacon out. Just put it on top.
Then, grab your dressing and drizzle it over the top. Voila.
My family loved this and because of all the protein (eggs, bacon, chicken) there was no need to add anything to the side for us. If you have a family of hearty eaters, some rolls or fruit salad would go great with this as well.
